Producer & Origin Story

Grown by Mustefa Abakeno, a dedicated smallholder managing 18 hectares of coffee on his farm in Beshasha Kebele near Agaro in the Jimma Highlands—his operation reflects the rich coffee heritage of Ethiopia.

In 2018, following regulatory changes that enabled private exports, Mustefa began exporting directly. He also established and runs his own wet (washing) station—Beshasha—through which he processes both his own harvest and cherry from local smallholder neighbours (each farming 4–10 hectares).

Supported by agronomist Harun (since 2021), Mustefa continuously refines his practices—from cherry selection to drying technique—boosting quality and community livelihoods year after year.


Farming & Processing Practices

  • Varieties: Selections 74110 and 74112 come from the Jimma Agricultural Research Centre, known for disease resistance and expressive aromatic potential.

  • Processing Method:

    1. Flotation: Removes unripe or defective cherries

    2. Pulping to separate the fruit from the bean

    3. Fermentation: 8–12 hours in tanks

    4. Washing: In channels to flush floaters and clean parchment

    5. Drying: First under shade, then on raised beds with shade netting (peak sun coverage between 11 a.m. and 2 p.m.) over a total of 7–10 days.

This approach yields exceptional clarity and consistency—from hot to cool cups.
